A new historic boutique hotel has opened its doors in Waco, drawing in both tourists and Waco locals. Chip and Joanna Gaines purchased the vacant downtown building and began their biggest fixer upper to date, with a vision to restore the hotel to its former glory days as a beautiful gathering space.
With the help of partner AJ Capital, Magnolia was able to transform the over 50,000 square-foot space. The hotel now contains 33 unique guest rooms, meeting and event space, two restaurants and a cafe. It boasts a moody, sophisticated vibe while paying homage to the building’s Moorish Revival roots and architecture.

The dining is open to the public, not just hotel guests. Bertie’s on the Rooftop presents a more fun and feminine feel than the darker spaces in the hotel. Delicious seasonal dishes are offered and aimed to bring people together. The name “Bertie’s” is in honor of Roy Ellsworth Lane and Herbert M. Greene, the original architects of the now hotel.
Another dining option found at Magnolia’s Hotel 1928 is The Brasserie. This restaurant is located on the main floor of the building and claims “southern classics with a Texas twist.” Dark green walls and brass fixtures set the scene for one of Waco’s most comfortable yet elevated dining experiences.
